___Recipes for italian ice, sorbet and sherbet:
The popularity of "Italian Ices" has increased steadily and has now become a year round treat. Limpert Brothers, Inc. has been creating flavors for over 100 years and some of the leading "Italian Ice" manufacturers are building business with Limpert flavors. You may use the following to flavor "Italian Ices" — Limpert Flavotones, Limpert Thrilltones, Limpert Natural Fruit Concentrates (NFC's) and Limpert Special Flavors.

Conventional ices have approximately 30% total sugars. No more than 25% of the total sugars in the formulas should be corn syrup solids. Eight ounces of Limpert's Stabilizer or 1½ #10 cans of Limpert's Neutral Sherbet Base are required as a stabilizer to 10 gallons of mix. Limpert's Fruit Acidsolution is used at the rate of 10 to 12 ounces to 10 gallons of mix to reduce sweetness and to accent the flavor.

Conventional ice requires high sugar levels because it is hardened and dispensed at the same temperature as hard ice cream. This eliminates the need for an additional dipping or dispensing cabinet with a warmer temperature.

"Italian Ices" are drawn with a low overrun, 10 - 25% maximum. They have less sugars, less stabilizer, less flavor, and less fruit acid. They require special high temperature cabinets; the hardening boxes are set about 10ºF, the dispensing cabinets are set at approximately 20ºF.

"Italian Ices" do not have a long shelf life, either in the hardening rooms or in the dispensing cabinets. They get "icy" and "crumbly" and lose their flavor. Some manufacturers use a little more flavor when they estimate longer periods in the hardening rooms. "Italian Ices" have approximately 18 - 19% total sugars.

The following is a suggested starting formula. Various customers slightly alter the amounts of flavor, acid, sugar, etc., according to their own taste. This formula equals 8½ to 8¾ gallons mix:

FOR WATER ICES:
Use 1 # 10 can RTU Neutral Sherbet Base, 3¾ gallons water, 13½ lbs. sugar, and mix thoroughly until dissolved. Add your desired Limpert Flavoring and sufficient water to bring up to 5 gallons-80 fl. oz. To this mix, add 5¼ to 7½ fl. oz. of Limpert's Fruit Acid. This formula is made to yield 7½ gallons of finished water ices.

FOR SHERBETS:
Use 1 # 10 can RTU Neutral Sherbet Base, 3 gallons water, ¾ gallons ice cream mix, 12¾ lbs. cane sugar, and your desired Limpert Flavoring, then with water, bring up to 5 gallons-80 fl. oz. Finally, 4½ to 6 fl. oz. Limpert's Fruit Acid is added after the sherbet has started to freeze in order to avoid curdling. This formula is made to yield 7½ gallons of finished product.
In the making of Ices and Sherbets, a certain percentage of Dextrose is important. This product contains the proper amount of Dextrose. No additional Dextrose is required.
